Ratatouille à la Pascal!

Every Monday afternoon, Jonathan teaches guitar to a French caterer/chef, Pascal. A few days ago, following directions Pascal jotted out for him, Jonathan attempted some first-ever homemade ratatouille – important because we eat store-bought ratatouille all the time. Anyway, his first attempt was delicious, so we decided to remake it and document it.

Here are step-by-step instructions on how to make your own ratatouille à la Pascal!

Ingredients: one-two onions, two zucchini, one-two bell peppers, one eggplant, rosemary, basil, thyme – also, three-four tomatoes (we used one can of pre-peeled tomatoes).
Our instructions from Pascal!
Chop the veggies and herbs!

Sautee the vegetables in olive oil in the following order: red pepper, onion, zucchini, egg plant, tomato, basil, rosemary, pepper to taste
Let the ingredients sweat for 2-3 hours.
Serve! Preferably with a fresh-baked baguette and some red wine.
